5-MINUTE BRUSHETTA

Packed with herbs and fresh garlic, this easy lunch supports the digestive system and helps eliminate toxins such as heavy metals from the body.

serves 1

INGREDIENTS:

2 slices high quality gluten-free bread (I use Good Grain Bakery)

1/2 very small red onion (finely chopped)

1 small garlic clove (finely chopped)

3/4 cup cherry tomatoes (roughly chopped)

1 tbsp organic olive oil

1 tbsp balsamic vinegar

1 tsp sea salt (I love Maldon!)

2 tbsp chopped herbs (use anything you have on hand but basil or mint work particularly well)

Few cracks of black pepper

Vegan cream cheese (I use Nush Foods)

 

HOW TO MAKE:

  1. Put the bread onto toast while you make the brushetta topping.

  2. Add the onion, garlic, tomatoes, oil, vinegar, salt, herbs and pepper to a bowl, stir well and set to one side.

  3. Once toasted, rub a raw garlic clove on the toast to add extra flavour.

  4. Spread a generous layer of vegan cream cheese onto the toast and top with the brushetta mix.
