NOODLES IN A COCONUT BROTH

Broccoli and coconut make this dish immune boosting thanks to the vitamin C, fibre, and lauric acid. This meal is also high in beneficial fats which make it filling and satisfying.

serves 1

INGREDIENTS:

50g gluten-free noodles (rice, soba etc.)

1 cup broccoli florets

1 tsp toasted sesame oil

1/2 small white onion

2 tsp garam masala

1/2 tsp turmeric

1 can coconut milk

1/2 tbsp coconut aminos (or soy sauce if not gf)

2 tsp coconut sugar

1/2 tsp salt

 

HOW TO MAKE:

  1. Add the noodles and broccoli to a pan of simmering water to cook for 5 minutes.

  2. In a separate pot add the oil, onion, spices and cook for a few minutes.

  3. Add the rest of the ingredients to the pot and simmer for a few minutes.

  4. Drain the cooked noodles and broccoli, add to a deep bowl and cover with the flavourful broth.

  5. Finish with black and white sesame seeds and a drizzle of extra sesame oil.
