Creamy Chicken Quinoa Salad

it does this by waking up a lazy gut by feeding the good bacteria that keep your digestion moving smoothly.

serves 3 | 10 minutes to prep

INGREDIENTS:

1 large cucumber

0.5 small red onion

2 large handfuls cherry tomatoes

3 tbsp fresh coriander

250g pre-cooked quinoa sachet

4 tbps paramsan cheese

250g pre-cooked chicken breast

for the sauce:

2 heaped tbsp greek yoghurt

1 tsp mustard

1 heaped tsp honey

0.5 tsp sea salt (I love Maldon!)

juice of 0.5 large lemon

 

HOW TO MAKE:

  1. Chop the cucumber, onion, tomatoes, coriander and chicken

  2. Add the quinoa (hot or cold) and cheese

  3. Make your sauce by whisking all the ingredients until smooth

  4. Add the sauce to the veggies, quinoa and chicken and mix well

  5. Store in an airtight container in the fridge for up to 3 days
