Vegan Roasted Cauliflower Soft Tacos

WHAT YOU’LL NEED:
Chopping board + knife
Small bowl x2
6x medium soft tacos (gluten free and vegan friendly)
1/2 medium cauliflower (chopped into bite sized pieces)
1 tbsp avocado oil
½ tsp turmeric
1/2 tsp cumin
1/2 tsp salt
1 small red onion (sliced)
¼ cup apple cider vinegar
½ tsp coconut sugar
pinch of salt
2tbsp vegan mayo
extras: crunchy lettuce, microgreens, cucumber, smashed avocado, coridander
HOW TO MAKE:
Pre-heat oven to 180c or 360f.
Coat the cauliflower with 1 tbsp avocado oil, 1/2 tsp turmeric, 1/2 tsp cumin, and 1/2 tsp salt.
Roast for 20-30 minutes (or until the edges are brown and crispy).
Meanwhile, add the sliced red onion to a small bowl along with a 1/4 cup acv, 1/2 tsp coconut sugar and a pinch of salt and set aside to pickle.
In another small bowl mix 2 tbsp vegan mayo with 2 tsp sriracha to make your sriracha mayo.
When the cauliflower is done add everything to your tacos along with crunchy lettuce, cucumber, avocado and coriander.
