Makes 2 large portions | Ready in 45 minutes | Easy

WHAT YOU’LL NEED:

  • Roasting tray

  • Large bowl

  • Large pot with lid

INGREDIENTS:

  • 1/2 large butternut squash (skin removed + cut into bite size chunks)

  • 1 tbsp coconut oil (or any other oil)

  • 1 tsp cumin

  • 1 tbsp coconut oil (or any other oil)

  • 1 medium onion (roughly chopped)

  • 1 tsp salt

  • 2 large garlic cloves (finely chopped)

  • 1 heaped tsp harissa paste

  • 2 tsp cumin

  • 1 tsp coriander

  • 1/2 tsp smoked paprika

  • 1/2 tsp cinnamon

  • 1 cup quinoa (thoroughly rinsed)

  • 1 tin black beans (drained and rinsed)

  • 1 tin chopped tomatoes

  • 1 tsp stock or bouillon (optional but adds extra flavour)

  • 400ml water

  • For topping: parsley, coconut yoghurt, nutritional yeast

HOW TO MAKE:

  1. Pre-heat oven to 200c or 390f

  2. Mix the butternut squash and 1 tbsp coconut oil in a bowl with your hands (the heat from your hands will melt the coconut oil)

  3. Add 1 tsp cumin and put the butternut squash onto a tray and roast for 30-40 minutes

  4. Add 1 tbsp coconut oil into a large pan over a medium/low heat

  5. Add the onion, salt, garlic and cook for a few minutes

  6. Add the rest of the ingredients, cover and simmer for 15 minutes

  7. Remove the lid and simmer for a further 10 minutes (or until most of the liquid has been absorbed)

  8. At this point the butternut squash should be cooked. Add to the pot and mix well.

  9. Serve with fresh parsley, creamy coyo and a sprinkling of cheesy nutrition yeast
